Although this is not an educational post, it is an informative post for teachers to use over the summer. This is a great treat on a hot day by the pool or just hanging in the yard during a barbecue. Goes great with the cinnamon tortilla chips.
1 cup finely chopped strawberries.
I medium orange, peeled and finely chopped.
2 large / 3 small kiwi’s peeled and finely chopped.
1/2 cup finely chopped pineapple or one 8 ounce can crushed pineapple (drained)
1/4 cup thinly sliced green onions
1/4 cup finely chopped yellow or green pepper
1 tablespoon lime or lemon juice
1 fresh jalapeno, seeded and chopped
Chop all of the ingredients and combine in a bowl. Cover and chill for 6 – 24 hours. I serve them will cinnamon and regular tortilla chips. On occasion I have also added a tiny bit of red onion.
